Peanut Butter Pie

American Peanut Butter Pie is one of those typically State side desserts that you will probably have tried on your holidays in Florida.

This is as easy as cheesecake to make and in truth, all our friends are bored with cheesecake anyway!

So I have experimented with various recipes and this is the winning version for you to try.

First, the ingredients:

1 cup of peanut butter (smooth or crunchy)
1 8 oz pack of cream cheese (Philadelphia type)
1 tin of condensed milk
1 cup of icing sugar
1 8 oz carton of double cream
1 large bar of plain chocolate

and for the crust

1 pack of digestive biscuits
3 oz butter

First, you make the pie crust. Crush the biscuits until they resemble fine breadcrumbs and stir in the melted butter. Press into a largeish pie tin and bake in a moderate oven til it starts to crisp, but not so hard that you cannot cut it.

Now, take the peanut butter, sugar and cream cheese and beat in a bowl til smooth and silky. Add the condensed milk and blend well and then fold in the double cream that you have whisked til it holds peaks but not til it is really thick.

If your pie crust is cool you can now pour your mixture in

Melt the chocolate in a bowl over hot water and when cool, but not set, you can cover your pie with it. Alternatively, before you pour the mixture in to the crust just gently fold the cooled chocolate into the mixture to provide a marbled effect.

Put your pie in the fridge for a couple of hours or more to set and the enjoy.

I can hear some of you having palpitations over the amount of calories this pie has, but worry not. It is so rich you will only be able to manage a small sliver.

Still worried? then here are some substitutions to make it healthier.

Instead of full fat Philly use the low fat
Instead of regular peanut butter, use half fat
Instead of double cream use whipping cream
Instead of a chocolate bar sprinkle the top with cocoa.
Halve the sugar.
Use ginger nuts instead of digestives.

But I am sure it will not be nearly as unctious as the original version and you end up eating a larger slice anyway.

Whichever version you choose to make I am sure it will be added to your home made desserts repertoire!
